This is probably best prepared on the day as nobody likes a soggy sandwich. Everything can be prepared and ready to go the day before and then quickly assembled on the day. These also make a healthy and fun finger food for a party.
Approx. € 1.91 per sandwich
Mix the cream cheese and chives together and spread over the tortilla. Tear the pepper into pieces and arrange on top, followed by a layer of the spinach. Season if wished but I prefer not to as the cheese is already a little salty. Roll up tightly and then cut into about 1.5cm slices to give about 12 pieces.
Keeping the shape of the roll, carefully lift the whole thing into a lunchbox to fit snugly. Then there are fun times ahead at lunch time as your little one arranges the pieces into a caterpillar shape before eating.
ALSO IN THE BOX: fruit smoothie, dried apple rings, bean dip with seeded crackers, pear and some radishes.
NUTRITION: Wholemeal wraps are a healthier option to white and they now even come with seeds in.
