Shaped into these cute hearts, these shortbreads are sure to win any one over if shared or given as a gift. Lavender not only smells wonderful but has many beneficial properties including calming and relaxing, promoting peaceful sleep and easing feelings of tension and anxiety. These are ideal for relaxing and unwinding with a cuppa.
Line a baking sheet with parchment paper and set aside.
Beat the butter, sugar and lavender essential oil in an electric mixer until smooth.
Beat in the flour until well blended to give a smooth paste.
Lightly flour a work surface and roll the dough out into a 1cm thick piece.
Using a heart shaped cutter that is 6cm at its widest point, stamp out 20 hearts, re-rolling the dough as necessary. Arrange them on the baking sheet as you go.
Sprinkle with extra caster sugar, cover and refrigerate for 15 minutes.
Preheat the oven to 190C (fan 170C), 375F, Gas Mark 5.
Bake for about 15 minutes until very lightly golden. Remove, leave on the tray for a few minutes and then carefully transfer to a wire rack to cool completely.
Arrange on a tiered stand or serving platter and serve.

125g unsalted butter
50g caster sugar + extra for dusting
4 drops therapeutic grade lavender essential oil *
175g plain flour + extra for dusting
