Build Your Own S’mores

You’ll love these sandwiches of warm gooey marshmallow squished between chewy cookies and laced with delicious sauces and sprinkles. They are so much fun to serve at a party and you can load the tray with any fillings you like and let your guests create their own combinations. The marshmallows are of course great toasted on a barbecue or campfire – hold them over the heat on sticks or skewers and then slide them carefully onto the cookies.

SERVES 6

Prepare a ‘build your own s’mores’ tray with five small serving bowls, six teaspoons and six napkins or parchment pieces.

Toast the coconut in a dry, wide frying pan over a medium heat, tossing until golden. Spoon into a bowl on the tray to cool.

Spoon the chocolate sauce and caramel sauce into separate bowls.

Crush the raspberries with a fork to release their juices and spoon into another small bowl. Toss the edible sprinkles into the remaining bowl. Finally, nestle six of the cookies onto the tray.

When ready to serve, turn the grill on to a high heat and place the shelf in the middle. Arrange the six remaining cookies bottom-side up on a baking tray and divide the marshmallows evenly between them in a single layer. Place under the grill for about 1 minute, keeping your eye on them as the marshmallow may burn quickly, until slightly charred and beginning to soften and ooze. Don’t be tempted to touch the marshmallow at this stage as it will be extremely hot. Carefully remove the biscuits from the grill and leave to cool for a minute or two.

Invite everyone to take a marshmallow cookie on a piece of parchment paper or napkin from the tray. Then they can help themselves by spooning their choice of drizzles, dollops, sprinkles and sprozzles over to make their own bespoke s’more, sandwiched with another cookie from the tray.

You will need...

2 tbsp desiccated coconut
250ml Chocolate Sauce
125ml Caramel Sauce
125g fresh raspberries
2 tsp edible sprinkles
12 large chocolate chip cookies
150g marshmallows
