Blueberry Pancakes

Some serving suggestions include anything from natural or greek yoghurt, honey, maple syrup or golden syrup and nuts like pecans, chopped hazelnuts or toasted flaked almonds as well as compote or fresh fruit. Also, try adding some ground cinnamon or nutmeg to the batter mix before cooking.

Makes about 12-14

Stir the dry ingredients together in a large bowl. Mix the wet ingredients together and whisk them into the dry, to give a smooth batter. Stir the blueberries through.

Heat the oil in a large non stick frying pan and working in batches pour tablespoonfuls of the batter, spaced apart, around the pan. Gently fry on each side for 2-3 minutes until puffed up and golden.

Serve with honey, nuts and some extra blueberries.

TIPS:

Try adding some ground cinnamon or nutmeg to the batter mix before cooking.

Rub the oil onto the pan with kitchen towel. That way you don’t use too much (which would make the pancakes greasy and those jeans tighter!). It’s best to use a good non-stick pan for this.

You will need...

150g plain flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
50g caster sugar
100ml buttermilk
2 eggs
25g butter, melted and cooled
100g crushed blueberries
1 tbsp sunflower oil
