Having a punch at a party is always a fun and handy way to serve a drink to guests but presenting it in a pumpkin is sure to add to the atmosphere! Make sure to choose a large pumpkin in order to take all of the drink. If the iced drink sounds too chilly for you then, omit the ice and warm the liquid part of the recipe through gently until it comes to a simmer before pouring into the pumpkin. Why not serve the punch with some tasty roasted pumpkin seeds? Simply toss the scooped out pumpkin seeds in a little oil and spices like cayenne, smoked paprika and / or cinnamon and salt and roast at 180C for about 15-20 minutes, tossing occasionally.
Makes about 2L
Slice the top off the pumpkin and scoop out the seeds and loose flesh to create a neat cavity.
Pop the ice inside. Remove the leaves from half of the physalis and quarter the fruit. Reserve the rest for serving. Scatter the prepared physalis and apple slices on top of the ice.
Pour in the lime juice followed by the apple juice and ginger beer. Serve straight away, pouring it into glasses with a ladle. Decorate each glass with a remaining physalis and serve with a straw.
Cut the top off a halloween themed or coloured balloon and pull the remaining rubber onto the base of a clean jam jar to create an instant and fun party punch drinking vessel!
1 large pumpkin
couple of handfuls of ice
large handful of physalis
1 apple, sliced
juice of 2 limes
1L apple juice
1L ginger beer
